Blood Orange Muffins
Chef's Note
For that extra-vibrant color and flavor, use fresh blood orange juice! If they aren't in season, regular oranges or cara cara oranges make a great substitute.
Air Fryer
Any standard air fryer will do
Muffin Tray & Cups
Baking tray that fits the air fryer; muffin paper cups are optional
Handmixer, Bowl & Cup
A handmixer, small bowl, and a 1-litre measuring cup
Pre-heat the air fryer for 2 minutes at 185 °C.
Mix the flour, baking powder and salt in a bowl.
In a 1 litre measuring cup mix the remaining ingredients.
Once smooth slowly mix in the dry ingredients from bowl.
Add muffin paper cups to the baking pan.
Fill the paper cups with the dough.
Insert into the air fryer and bake for 15 minutes at 175 °C.
Once baked, take out of the air fryer and let them cool down.
Use a small sieve to sprinkle some icing sugar on top.
